Certain things from the time “before” I was Gluten Free (over a decade ago!) I still miss. Warm apple pie, topped with ice cream, for example. It’s not impossible to find a decent gluten free pie crust. It’s just difficult and involves a lot of driving to multiple stores in search of that one mix/crust that worked.
Last week I was craving apple pie something fierce. I decided to try a little experiment and was so delighted with the results!
Easy easy apple pie. I added a pear and some caramel and the results were divine.
1 Udi’s Gluten-Free Frozen Pizza Crust
1.Ripe pear, peeled & sliced
2 Apples peeled & sliced
1/4 c vanilla sugar (or tsp vanilla & sugar) – or less or more, to taste
1tsp cinnamon
1 tbsp plus more for drizzing caramel sauce
small amount of melted butter
Mix together the sliced apple & pear, vanilla sugar, cinnamon
Place the pizza crust in a (springform if you have it) cake pan with tall sides. I used a nonstick pan and wasn’t too worried about sticking as the crust was already cooked but advise spraying the pan as the juices make the crust a little sticky as it bakes.
Brush the top of the crust with a little melted butter and top with 1 Tbsp of caramel sauce. Arrange fruit on top and drizzle with extra caramel sauce. Make sure the crust is completely covered.
Place in preheated ovenĀ at 400 degree for 30 minutes or until the apple/pear mix looks thoroughly cooked through.
Serve warm with whipped cream or ice cream.
