I’ll give the Zucchini recipes a rest… eventually. When we’ve worn out the stock!
This one was thrown together with help from my fave local spot to shop, Trader Joes.
Here’s how to do it:
1. Scoop seeds and some of the flesh (carefully) out of an oversized zucchini that has been split in half.
2. Place zucchini “boats” in a baking dish that has been sprayed.
3. Mix together:
- 1 package ground turkey (a bit over a lb)
- 2 eggs
- a little (maybe 1/4 jar) marinara sauce
- 1.3 c parmesan cheese
- 1/2 package precooked brown rice
- 1/3 cup oat bran
- salt and pepper to taste
4. Mound meat mixture in the shells and top off with remaining marinara sauce and shredded mozzeralla and parm to your liking.
Bake at 400 degrees for 40 min or till a meat thermometer inserted in the center reads 165
This is one of those dinners that looks a little sloppy but tastes great. It’s also relatively healthy… depending on how much cheese you pile on!
I don’t have any wonderful plated photos to share as it went too fast to photo. You’re going to have to trust me and the fact that there were no leftovers!
