
This original recipe for Greek Salad Nachos is what we threw together for dinner last night. Most of the ingredients were from Trader Joes (except for the produce, which was from a farm box delivery). It was so delicious that there were no leftovers. It’s a fork and finger food dinner which makes it kid friendly – use the corn chips like scoops and then eat the rest of the salad with a fork. I wish I’d taken more photos as it was really pretty on the plate. It just didn’t stick around long enough for pictures.
- 1 Head of Oak Leaf Lettuce (or your fave lettuce) chopped
- 5 Large handfuls of your favorite corn chips
- 1 12.5oz can of Chicken (we used the blue labelled one from Trader Joes)
- 1 Tbs Olive oil
- 1-2 tsp balsamic glaze
- 2/3 c Feta Cheese Crumbled, divided in half
- 3 TBS Kalamata Olives (or adjust to your taste)
- 1/2 c chopped Tomato
- 1/2 c chopped Cucumber
Drain and shred the chicken. Mix with the Olive Oil and half of the feta cheese. Warm in microwave for about a minute to a minute and a half. Meanwhile, arrange cornchips on bed of lettuce
Spoon warm mixture over chips. Top with remaining Feta, Olives, Tomatos, Cucumbers and drizzle with balsamic glaze
