It’s hot outside and I am buried in Zucchini. Zucchini bread. Zucchini muffins. Ratatouille. Some of these Zucchini are going to eat me, if I don’t eat them first. The cucumbers are going crazy as well. I hope they keep it up at least until the tomatoes kick in! There is nothing better than a simple cucumber, tomato and parsley salad with a squirt of fresh lime or lemon from a backyard tree.

I’m so thrilled that we’ve grown this garden this summer. Besides providing a living lesson for my kids and a daily adventure, we are proud to be growing our own food organically, in a pesticide and chemical free way. So I know what they are eating is healthy, through and through. Salads, main dishes, sides. Who knew we could put so much food on the table with so little effort and have so much fun doing it as well?

    Amazing! I feel the same way about the life lessons… our garden is just about starting to produce too! Which is a shock to this Diva!

    I’ll be looking to you for Zucchini tips… I have some babies starting and I know that is just the beginning!
