I just got back from the Greek islands where I got accustomed to eating Greek Salad every single day. It’s a lot like my favorite Israeli salad – I get addicted quickly.
How does this lead to Bulgarian salad?
Because I was showing signs of withdrawal I picked up some Bulgarian (ie REAL sheeps milk, brined) Feta at the international market. Because I was distracted I forgot the olives. So when I came home I had Shopska salad instead. I didn’t really miss the olives. This was so good.
This is enough for two people or one very hungry salad lover. Yes I ate it all myself.
- 5 small Persian cucumbers or 1/2- 3/4 English Cuke
- 1 medium tomato
- about two tablespoons of good feta, crumbled
- small pinch of flor de sal or your fave salt & pepper blend
Chop the veggies, toss in a bowl with the feta and salt. Devour.
