In March, California Strawberries took Momfluential to Oxnard California to explore Terry Farms. During our visit we tasted several delicious strawberry inspired recipes that were to die for.The Lobos Truck was kind enough to share one of my favorite recipes with us, so I can share it with you!
Part One – The Ribs:
Prepare your ribs! For this recipe we used 3 Racks of Baby Back Ribs , approximately 36 pieces
You prepare the ribs first removing the silver skin. You’ll want your ribs to be really cold (put in freezer for 20 minutes) when you work with them, It’s easier to get the silver skin off & makes for a juicier finished product. With your fingers find a loose piece of the membrane and get in between the meat & membrane. Peel like a sticker.
Part Two: The Rub
- 4 cups brown sugar
- ½ cup unsalted Cajun seasoning, salt
- 2 tablespoons garlic powder, onion powder, paprika, mustard powder, finely ground coffee
- 1 tablespoon pepper, cayenne (optional), ginger powder, cumin, coriander
- 1 cup white wine
Mix together! Cover ribs with the rub.
Place ribs meat side down on a cold sheet pan (3 racks will fit on a half size perforated pan)
Add: 1 cup liquid smoke & 1 cup water to the pan
Heat oven to 450 degrees. Start ribs meat side down for 35-45 minutes or until you can see them caramelizing & smell them. Turn the ribs meat side up & lower the oven to 325 drgrees.
Part Three: Liquid Gold:
After you remove the ribs from the oven & allow them to rest & cool, the liquid left in the pan should be scraped into a sauce pot.
- 2 cups bbq sauce
- 4 minced garlic cloves
Heat to a simmer. If you like a sauce that is thinner add white wine. If you need more fat add butter.
Cut em up:
Cut the Meat when cooled for about 10 minutes. If you have never done this before the easiest way is to put them meat side down. With a sharp knife find the space between the bones and slice.
You can choose to Cut em up and eat as is,or take it a step further and grill em up! Either way you will want to dip your ribs in Strawberry BBQ sauce (recipe below)
Part 4: Grill them up!
Heat a grill, cast iron Pan or fry pan and add ¼ Tbl. Butter
Dip each Rib or slab into the liquid gold & place on hot grill.
Turn 4 times so each side gets caramelized.
Remove from pan & drizzle more liquid gold.
On The Side Essential: Strawberry BBQ Sauce
- 2 cups fresh strawberries
- 1/3 cup strawberry preserves
- 1/3 cup strawberry ketchup
- 2 tablespoons soy sauce or Brags
- 2 tablespoons lemon juice
- 1 large garlic clove, minced
- 2 tablespoon olive oil
- 1 teaspoon fresh ginger, chopped
- 1/2 teaspoon cayenne powder
- 1/2 teaspoon lemon zest
- 1 scallion, minced
- 2 tablespoons fresh cilantro, chopped
- 1/2 onion diced
SautÃ© olive oil,onion, garlic, shallot, ginger. Add saute mixture and all remaining ingredients except cilantro to blender & blend till smooth.
Add cilantro at the end
Serve with Ribs & Enjoy
