Like me, you may have thought that good gluten free challah is a myth. Don’t give up hope yet! Read on! I’m about to introduce you to a challah mix from a brand I’ve just reviewed, Blends by Orly.
I have been gluten free for the last 15 years. It’s a significant portion of my life. So long that I forgot how many things taste. More than that. I’ve forgotten how they feel. I think that chefs refer to certain foods as having a “mouthfeel” and I get it.
While I have forgotten many things like, I can’t forget the mouthfeel and taste of a hunk of fresh challah. Tragically, I have not found anything that has even come close to replicating that yeasty, slightly stretchy, but fluffy, texture. It’s a hard thing to describe but my mouth remembers!
It’s been a many years long quest for me to find a good gluten free challah. At one point I simply gave up. White flag. Surrender!
Then a friend introduced me to her cousin Orly, who custom blends gluten free flours for better results. I love this because honestly, as much as I miss good challah, I don’t have time to source and mix and measure several kinds together, every time I have a craving.
Blends by Orly has a special mix (Manhattan blend) that makes it easy for you. It’s just about as easy as my regular challah in a mixer recipe (that I cannot eat). Actually it is easier as there is less measuring and less mess than my challah from scratch recipe.
I did not do the best job with braiding these, so maybe not my pretties Challah ever but wow. I had to slap off the hands of the gluten eaters in order to save myself some leftovers.
It was that delicious.
It’s great to know that good gluten free challah is not a mythical unicorn. It can be achieved! I will definitely be making this again and I am so grateful to Orly for conjuring up this mix. I can’t wait to try some of her others.
