Some days you need to come home to a warm and comforting dinner. But you don’t want to measure, fuss… think. That’s when this Stuffed Cabbage soup recipe is your BFF. All of the ingredients except for a bit of Italian seasoning that I added, came from Trader Joes. The recipe uses the whole bag/can etc so there is no waste. I should also mention that it’s pretty darned healthy. If you don’t add the rice/dairy it’s low carb, gluten and dairy free.
Here are all the ingredients I used in the soup (pictured above):
- 1 small can tomato paste
- 1 12 oz can tomato sauce
- 1 bag shredded cabbage
- 1 .5 lbs ground turkey
- 1 box veggie broth
- 1 container mirepoix
- pinch salt
- dash garlic
- 1 tsp italian seasoning ( or more to taste)
- Balsamic Glaze
Here’s how to make it:
Heat a no-stick frying pan and saute the mirepoix mix. Dump into crockpot. Add ground turkey to the pan and let it sit to brown. Sprinkle on some garlic powder and italian spices. When turkey starts to brown, use a plastic spatula to break it up into smaller crumbles. Remove from heat and add to crock pot. Squirt a healthy swirl of balsamic glaze over the turkey (about 1 tbsp)
Add cabbage, tomato sauce, tomato paste and broth to the crockpot along with three 12 oz cans of water. Stir, cover and cook on low heat for 6-8 hrs.
A dollop of sour cream or greek yogurt & some brown rice (I use the frozen cooked rice)
Now wasn’t that easy? All the flavor of stuffed cabbage, healthy, easy and fuss free. I wish I had a photo, but my family gobbled this soup up as soon as they all got home, and I didn’t have a chance to snap a photo. If you make it, send me one?
