There’s Nothing Like the Smell of Roast Chicken

When I saw this recipe (SIMPLE!) from TheBlahBlahBlahger for Chicken Provencal, I knew exactly what was for dinner tonight. I ran straight to Trader Joes and bought myself a chicken and all the fixins. In my case I improvised a little with the spices, added mushrooms and carrots to the mix, sprinkled in a little coriander, left out the tarragon. I’m like that. I can never leave things alone. I left the lemon alone though. That’s just sunshine.

My house smells so good right now. Roast Chicken is such a reassuring smell to me. Even if I’m not eating it, it’s a smell that signals everything will be alright.

    Thank you!!! I know what I’m making for dinner tonight. And there is absolutely nothing better than the smell of a chicken roasting in the oven. It’s the smell of home. I’m leaving out the tarragon, too. I think it’s the only spice in the world I’m not fond of. Over from SITS. So intrigued by your site. Time to explore!
